    Football Season is Here

    It’s the most wonderful time of the year … football season! And Lady Luck Casino® Nemacolin is the best place to be for all of your touchdown action. There's nothing more exciting than being surrounded by the energy of excited sports fans and eating great food. In fact, cooking the recipes are half the fun. Read on to learn a new creative game-day recipe that you can enjoy.

    Party Recipe From Home

    Throwing parties at home is one of the parts of football season that are the most fun. And you don’t even have to be a professional chef to cook up some creative game day recipes. Here’s just one to get you started.

    BBQ’d Pork Nachos

    Ingredients:

    • 1 1/2
cups cooked pork shredded BBQ grilled or 1 1⁄2 cups cooked chicken, grilled
    • 2 cups barbecue sauce
    • 12 ounce can pinto beans, drained and rinsed
    • 1 lime
    • 1 tablespoon Cajun seasoning
    • 2 medium tomatoes, ripe, roughly chopped
    • 2 pickled jalapeno peppers, chopped
    • 1/2 cup fresh cilantro, loosely packed, roughly chopped, plus additional for garnish.
    • 7 ounces white corn tortilla chips
    • 1/3 cup sour cream, plus additional sour cream, for garnish
    • 12 ounces shredded cheddar cheese
    • Salt and pepper

    Directions:

    Preheat the oven to 375 F. Toss your meat with a cup of barbecue sauce and put to the side.

    Mash the beans, lime juice and half of the Cajun seasoning, and salt together. In a separate bowl, mix the tomatoes with the 1/2 cup of cilantro and jalapenos. Taste your mixture as you go, seasoning with salt and pepper as necessary.

    Spread out half of the chips in a baking dish. Pour the meat, 1/3 cup of sour cream, and about half of the tomato mixture on top of the chips. Then layer the remainder of the chips over the top, followed by the remainder of your tomato mixture, sauce and Cajun rub. Finally sprinkle shredded cheese over the dish.

    Bake the nachos until cheese is melted, or until the cheese is brown. This should be approximately 7 minutes. Serve warm. Garnish with cilantro and sour cream.
