Delicious Ways to Enjoy Seafood This Summer
Nothing says summer like seafood! It’s the perfect time to try new tastes and flavors from the sea and celebrate the bounty of the season. This is the year to make it the summer of seafood. Want some ideas to get started? Try these quick and easy recipes:
Seared Scallops with Warm Tuscan Beans
This simple, yet elegant meal is easy enough for a weeknight and impressive enough to serve to guests. A side of garlic bread is a must, as it’s an ideal pairing for the flavorful sauce.
Start to finish: 20 minutes
2 tablespoons olive oil, divided
1 1/2 pounds sea scallops
1/4 teaspoon salt
1 cup chopped onion
1/8 teaspoon crushed red pepper
2 garlic cloves, minced
1/4 cup dry white wine
1 cup fat-free, low-sodium chicken broth
1 (19-ounce) can cannellini beans or other white beans, rinsed and drained
1 (6-ounce) package fresh baby spinach
2 tablespoons chopped fresh basil
Over medium-high heat, warm up 1 tablespoon oil in a large nonstick skillet. Season scallops with salt, then add to pan, cooking about 2 minutes on each side. Remove scallops from pan and keep warm while making the white beans.
Heat 1 tablespoon oil until just shimmering and add onion to pan. Sauté until softened, about 2 minutes, then add pepper and garlic, cooking for 20 more seconds while stirring constantly.
Stir in wine and cook for 1 minute, then stir in broth, beans, and spinach and cook 2-3 more minutes or until spinach wilts. Stir in basil and remove from heat.
Serve immediately, nestling the scallops onto a bed of beans.
Marinated Tuna Steak
A good marinade never goes out of style, and this one is versatile enough to be used for chicken or pork. It’s particularly good on this tuna, however, and helps the fish remain moist and succulent.
Start to finish: 50 minutes (includes 30 minutes of hands-off time while the fish marinates)
1/4 cup orange juice
1/4 cup soy sauce
2 tablespoons olive oil
1 tablespoon lemon juice
2 tablespoons chopped fresh parsley
1 clove garlic, minced
1/2 teaspoon chopped fresh oregano
1/2 teaspoon ground black pepper
4 (4 ounce) tuna steaks
In a dish large enough for the tuna steaks, combine orange juice, soy sauce, olive oil, lemon juice, and herbs and spices (parsley, garlic, oregano, and pepper). Cover the tuna steaks with the marinade, making sure the steaks are fully coated. Refrigerate for 30 minutes, covered.
Preheat grill or grill pan over high heat and lightly oil. Cook the tuna steaks on one side for 5 to 6 minutes, then flip over and cook an additional 5 minutes while basting with leftover marinade.
